Gavin Chin is the chef and founder of House of Culture, a Perth-born, Malaysian-heritage chef celebrated for his vibrant “neighbourhood to table” philosophy and multicultural cooking style. Previously the head chef of Brut!, Gavin has quickly established himself as one of Hong Kong’s most exciting young culinary voices.

In this intimate hands-on class, Gavin will guide you step-by-step through two standout dishes from his repertoire: the comforting yet refined Humble Onion Tart and the elegant Dry Aged Threadfin with Pomelo Beurre Blanc. Expect to master silky caramelised onion filling in a buttery crust alongside perfectly cooked dry-aged threadfin paired with a bright, fragrant pomelo beurre blanc — a wonderful contrast of rustic charm and refined coastal flavours.
